Here's something to try on a rainy weekend:

It is actually categorized as a fresh cheese. This is because it is never aged. You can eat the cheese the same day you make it."

OK, when you read the recipe you will see that it is not trivial. But it is still one form of cheese that you can make in a single day, which is rare.
